Cinnamon is available in two primary varieties: Cinnamomum zeylanicum (also known as true cinnamon) and Cinnamomum cassia (commonly referred to as Cassia cinnamon). Cassia Cinnamon

Cassia cinnamon is derived from the bark of the Cassia tree (Cinnamomum aromaticum). This evergreen grows in the shade of taller trees, in the rain forests of Indonesia, notably Sumatra, and Vietnam. Its growth process is entirely natural.

The harvesting of Cassia revolves around a circular, sustainable growth cycle. At the age of 8 to 10 years, a tree is harvested. The bark is peeled off, while the remaining parts find domestic uses among local farmers. The peeled bark is scraped and dried in the sun, resulting in the deliciously fragrant and tasty (Cassia) cinnamon sticks we all know so well. 

Cassia cinnamon is the most common quality used in the international food industry and is known for its pungent and sweet flavour.  

Zeylanicum Cinnamon

Zeylanicum cinnamon, often called ’true cinnamon or Ceylon cinnamon’, originates from Sri Lanka. At Royal Polak Spices, we source our high-quality Zeylanicum cinnamon from Sri Lanka as well as other countries, such as Madagascar and Tanzania. Unlike the Cassia tree, which grows tall and robust, the Zeylanicum variety is a leafy, compact bush. Zeylanicum cinnamon offers a more subtler taste profile compared to its Cassia counterpart. Where Cassia is known for being sweet and pungent, Zeylanicum has a milder taste.
